No Sulfite Added
History
This is an experiment gone very right. The 2002 vintage provided us with beautiful fruit and high enough tonnage to allow us a little room to try new things. The new National Organic Program was taking effect with special attention to sulfites, and our organic status brings frequent phone calls for no sulfite added wines. Always curious, and always seeking ways to produce terroir distinct wines, we made the decision to try a No-Sulfite added (NSA) pinot noir.
Dr. Robert Gross, consulting winemaker Rich Cushman and then assistant winemaker Melissa Burr set out to find the best practices in NSA wines. After tasting more than a dozen various red wines that can be readily purchased at area stores, it was determined that if we can not make a better tasting and aging NSA wine we would scrap the experiment.
So, with our fingers crossed and a very good vintage on our hands we set out to make a great wine. Fortunately for us we did it. Tank fermented, with oak cubes dropped in to bring the influence of the barrel, for several months the wine was kept cold and sterile. A close eye was kept on the wine and frequent tests were done to be sure it was aging without bacterial infection. Finally, in May, the wine was tightly filtered and bottled for early release.
The result was a beautiful, big, juicy Pinot Noir that continues to age gracefully and be a pleasure to drink.
5 vintages into this wine, it continues to get better and better.
With its cult like following this wine usually comes in early summer and is out the door by Christmas time.
